Fortunately, I am not an employee and therefore ask very directly and without bias: Is this done behind the employer's back, or is it knowingly tolerated?

Firstly. What does that have to do with the thread? Does it increase construction costs? Secondly. Normally, one does not work 365 days a year. There is such a thing as vacation, and illness also occurs. Thirdly. I can determine and record my own working hours. Since I’ve been working at the company for almost 11 years, don’t worry about that. Back to the topic.

I believe people who still build single-family houses nowadays also don’t necessarily work in jobs where performance evaluation is based on timestamps. If my employer insisted on the contractually agreed working hours, I would have been on sabbatical for five years...

That's the subtle difference... I consciously buy a plot of land with a beautiful view/peace and not in the flight path, next to the scrapyard/green waste yard/railway line... Many people consciously choose the middle of nowhere because it is quiet when sitting outside in the evening and understandably don't want shadows flying past every second and think they are having a stroke...

Yes, that's true. But that is just a snapshot. The price of the land does not include eternal peace, no annoying neighbors, etc.
