We will only have 7k net after the end of parental leave. Since there is no family support nearby, my wife will take at least two years of parental leave (so 2024+ end of parental leave).

The question with something like this is always what is included and what comes on top. There is still a lot of potential for price increases.

Okay, then that was unfortunately phrased "We end up at €7000 (...) and will have to rent because of that." You could still build afterwards. Or you reconsider smaller now. Whether you want to build is a different issue with high construction costs and (at least compared to the last few years) high interest rates. But "we HAVE to rent" I don’t see that now either.

The middle class is not disappearing. The median just lies at an absolutely higher household income. You just have to save nicely for another 5-10 years, that will work out. You’re still young! We do have more income, but were able to save about 50-60k per year. Just be frugal, then you can put aside a decent amount. But the best would be if you had about 1,800 net and, like almost everyone out there, got start-up capital from daddy, then even the government would have added Baukindergeld ;) I’m being cynical again, but that’s how it is here. On your own initiative you can catch up, but it’s not enough.

7k is just average nowadays, you won’t catch up without inheritance.

Nothing personal, and surely the interest and construction cost situation is not the best at the moment, but either you have not dealt properly with the topic yet or you just like to whine. With 110k equity and 7000k (sic!) you can get something done. Mark my words.
