Just a layman's question in between (hope it's okay):
My house construction company is asking if they should reroute the water pipes towards the kitchen window. We want to have the sink and dishwasher there. It's a special request that costs 475 euros. Should I have it done by them or the kitchen installer? Apparently many kitchen installers don't do that... but I haven't had any discussions myself yet.

Have it done, the kitchen installer can at most botch something after rough installation and plastering.
Of course, it's crazy that something like that costs extra.
You will also need wastewater connections there.
Normally, the kitchen installer provides the plan for electricity and plumbing, after which the rough installation is coordinated.
