What I like is that on the wall side the base is plastered and flush. I think it's great! Out of interest, how is that done?

The plasterer plastered up to about 20 cm before the top edge of the concrete stair steps and left the rest free.

We did this throughout the whole house where tiling was done (so in the bathrooms, utility room, and pantry).

Then tiling was done and at the end it was "plastered on" and finally a finishing plaster on top. Of course, each time the floor coverings/stairs were carefully taped off.

All done on our own.

I didn’t notice that at all, but I like it too. Some things just look good because a mistake is missing.

Not at all.
Personally, I would have left it open until the kids are here, because I like it that way quite a bit.

However, we are currently getting quotes for railings.
The plan is one with a wooden handrail and the rest in stainless steel.

Something like this (just with a few fewer bars):
