We once treated it with larch oil (a bit uneven in one spot, I need to redo that), which is supposed to slow down the graying. Probably you have to recoat it more often or just let it gray or paint it colored at some point.

Every year oil it, then it stays nice - my uncle has his apprentices do it every year at his house.

He is a total wood fanatic (carpenter), but finds the grey wood utterly hideous.

We also made a curtain facade from "artificially" weathered wood and I must clarify that you get a wonderful mirror-smooth and glossy surface, which at most needs to be repainted once every 10 years (!) and that without sanding! The glaze penetrates into the wood and nothing peels off! It is a beautiful appearance. In the pictures, you can see the difference between natural wood (larch) and finished paint and how the surface shines. The color tone here is now Patina, but there are many other color tones as well. This glaze can be ordered in 2000 different NCS tones, so nothing with "cold and gray".

With us, the excavation pit is finally completely closed again. Slowly, work above ground can also start. At the moment, it looks like much less work than it actually was.

If you don’t paint, the wood just turns gray and weathers, you have to know what you prefer. I don’t really like natural weathering because wasps like to swarm on it and eat the wood. Painting itself is only a lot of work the first time, since the back side also has to be painted, and that’s not a smooth surface but full of grooves and cracks. However, the final coat is done very quickly. It takes several hours to dry each time. Overpainting then only takes place on the visible side and is also very quick. The glaze also contains "Schutz" (i.e. biocides) against algae, fungi, and pests, as well as against UV light. So not just paint. You can also get the glaze colorless if you prefer the natural look.
