Plan stones are laid with adhesive for the bed joints and actually (then of course without such gaps) nothing at all for the head joints. Here, insulation mortar is probably called for. On the one hand, there is no adhesive for such thick joints, and on the other hand probably not in qualities that close thermal bridges.and obviously the adhesive (these days it’s probably no longer mortar) was just smeared in.
