As you can see, the gables are built first and then the roof truss. For me, the roof truss comes first, then the gables are built. Does it not matter which way you do it, or does one method have an advantage or disadvantage over the other? Maybe there is someone knowledgeable here.

I would say that the common practice is to build the gables first, then put up the rafters, and then fill in the rafters with masonry.

No, in our area it is exactly the opposite. I have never seen the variant shown here. But it probably doesn't matter at all. The result will be the same. Which variant is chosen probably depends on the companies' time management. Here, the bricklayer simply doesn't have to wait for the carpenter.

That is a question of suitability. A purlin roof naturally requires a gable if it does not have its own post framework (which would also partly determine the floor plan), so the gable must be there beforehand. A rafter roof, and even more so a truss roof, doesn’t care about that; sometimes people like to make the fiddly gable later in those cases.

Oh offset, probably correct according to the floor plan but visually just crappy
