I checked. You also know the appearance of the floor plans. Nothing is written there. Not in any views either.

Can you recommend something about the clearance height?

Well, then it's simple... from the 2.55m you subtract about 35cm for the standard roller shutter box and you have 2.20m left for the floor-to-ceiling windows. The sill height for normal windows is usually about 90cm (can also be up to 1m). Then you can place your window from 90cm up to 2.20m height, which is about 1.30m, maybe a bit less in the OG.
I wouldn’t take the room doors at 2m height, but rather the next bigger standard size (about 2.12m), it looks much better.

We currently have half-height windows planned at 1.01/1.26 and 2.01/1.26 with a sill height of 87 (sill height was set by the architect). You could keep the window height at 1.26 and simply change the sill height from 87 to 94cm. I just measured 87cm and find it a bit low anyway.

As I said, I would make the windows as high as possible since they are produced with millimeter precision anyway. I would make the front door 2.20m high. Sill height 87 is probably plus windowsill and then results in 90cm.

I would therefore bring all the half-height windows on the north side to 1.01/1.26 and 2.01/1.26. Is it too mixed if the two children's rooms don't match the sequence? I would give them 1.76/2.20 and 1.76/1.26. In the office, unfortunately, I don't have space for 1.76 width. I want to choose a double-leaf window there so that it doesn't look like a storage room. Therefore, the window there is 1.51/1.26. In the living room, the individual doors are 1.13/2.20 and 3.01/2.20 (however, it is divided into three parts: 2m double door + 1m glass element). The stairwell window is currently 1.76/1.26. I don't know if I should rather bring it to 2.01/1.26? Is that too much mixed? Sorry for all the numbers. Tiresome window topic. I'm slowly coming to an end.

But now I have to set sizes. With a ceiling of 2.55m, maximum means 1.3m high for half-height, since you find a sill height of 90 + 3cm window sill ideal? So you would choose 1.01/1.30 or 2.01/1.30?
