Short question:
Is it allowed to move load-bearing walls by a few centimeters after the building permit?
I just realize that I could use a few more centimeters in the kitchen to add another tall cabinet. Are there construction tolerances that allow the wall in the execution drawing, which will still follow at some point, to be shifted slightly?

Yes, should be no problem.

The building authority doesn't really care what's inside, but the structural engineering will probably have to be redone!

The structural analysis has not been done yet. Do a few centimeters really make such a difference in the structural analysis?

Structural analysis is something solid and not approximate - I have the impression that the structural analysis has to be submitted along with the building application (but I could be wrong)
