Do I understand the plan correctly that a controlled residential ventilation system is installed in the garage? Supply air and exhaust air?!

Exactly; both are present.

The site manager measured for me earlier that both garage door openings are the same height in the raw construction dimension. The doors are different heights because the different designs come with different rails. Everything is correct as it is. And the fact that the door is only 2m high is also due to the raw construction dimension. From the 2.135m you still have to subtract the screed, he says. I told him that I would have the surveyor check this again for acceptance and that for now I would just take note of it.

These are the external ducts that go through the garage roof.

We are not getting any screed at all but an industrial floor which is much lower in floor construction. We currently also have exactly 2.13 and our door will then be ordered at 2.12 or so.

Have you measured that yourself? I thought the front gate looked in the photos as if the lintel above it was not as high as the one above the rear gate and door. With the door and finished height, it’s the same problem as with the other doors/windows - isn’t it?
