Should layers then be compacted behind it? Will it then gradually outgrow the mortar? I find it very pretty.

No, it is not compacted behind it, as something should still be able to grow there, but there is drainage. At this point that can happen, on the coarser walls we have planted wall vegetation (I don't have a picture right now). Thank you.

Our beginning of an attempt to make the slope walkable:

Boards are still being placed to prevent the wood chips from sliding down. The panels are quite thick and still need to be worked in a bit.

The lawn is also growing cheerfully. Unfortunately somewhat unevenly:
