So storage space is really THE factor, otherwise a thousand things are just lying around (unlike in the picture). We always have counters, but we eat there more often or have breakfast. We rarely sit at the dining table. Therefore, the chair has to be comfortable and the tabletop at a pleasant height. You can try out a lot beforehand in furniture stores to see what might fit. We had various Side-by-Sides and the favorite, both visually and in terms of use, is one with 2x60cm width, so one part cooling, the other freezing. Most recently we had the Liebherr, but they want quite a few euros for that. Siemens/Bosch also have some quite nice ones. These 90cm American ones are more like toys to me. A saleswoman once clearly told me: Try to fit a frozen pizza in the compartment... I never eat that, but the background was clear to me; no space in the freezer compartment. If at all, then only 2 separate parts as Side-by-Sides in 120 width and then really somewhere freestanding separately as an eye-catcher if you like it (for us even in the dining room despite many objections), because we liked it there very much; then you just walk 3 steps more, my goodness. It’s not a stressful canteen with time pressure. If a Side-by-Side is built in, then it has to be done nicely, which is not easy. We don’t like the other integrated appliances with furniture doors so much and I want a lot of space there, therefore always freestanding but 120 and space, even though it’s usually just the two of us. Maybe not sensible but nice for us.

I find them really stylish, but I would definitely leave out the counter / hip breaker there. Is the material of the countertop really that important to you? I still remember our initial kitchen planning. It absolutely had to be a real wood countertop. But after many consultations, we finally ended up with a completely ordinary laminated one. Everywhere we were advised against the elaborate material. Not because they didn't trust us with the care, but because people wanted to prevent us from causing trouble for ourselves. Building a house and a new kitchen is exciting for the first 1-2 years. But standing at home on weekends caring for the stone / wood / concrete countertop takes much longer than 2 years. And if by year 4 you're already annoyed by dents, scratches, cracks, or the maintenance effort, then you might wish you had chosen an easy-care product. These are also available in all colors and designs. Otherwise, I am open to unconventional things, but with countertops: There is a reason why they have proven themselves so well.

You either like bar counters or you don’t. I like it!!
Often extremely expensive at the kitchen builder, so consider a multiplex board absolutely in 40mm (beech or maple I believe mostly) from the timber trade. Costs little money, compared to kitchen prices nothing!
You can easily have the edges chamfered then finish as desired with wax, varnish, transparent, etc., takes 30 minutes and the bar counter board is done.
We have this here, had it before and also again in the bathroom, where the sink sits on it. Absolutely stylish, inexpensive solution, possibly a steel frame underneath (€50-100 from the locksmith) and the individual, valuable solution is ready.
Hip breakers...??? If you don’t like it, you’ll fear or be annoyed by something like that. My hips are fine.....if only everything else were still so good-. I also believe that in very few ambulances people are driven who have just broken their hips on the bar counter. More likely stair stumblers, window cleaning fallers, hobby electricians, lawn mower finger cutters or people who have cut their hand with the fancy Sunday dishes.
GO for bar counters!!!

As everyone likes... but here the countertop is disturbing.

The light one is definitely friendlier.

Patterned countertops look busy; I think a solid color is better. There is already enough visual distraction in the kitchen due to various knickknacks.
