We are building right now as well, and all offers were sent to us by email, so we can always track exactly which item costs what. Of course, I don’t know much about this; it’s our first house and the first construction site :)

I would be very surprised. The offers are for the general contractor and thus the price he has to pay to the subcontractor. The difference between this price and the price he charges you is his margin (not profit). So why should he give you the offers? That would be like asking the baker for the purchase price of the flour.
