If we build a "normal" gable roof house, it has to have some kind of twist, otherwise I might accidentally get bored to death...

And here you don’t get bored with this house? The central gables plus precise symmetry are probably the most boring thing there can be in architecture. Every gable roof house may break with symmetry, come with highlights, color/pattern plays on the facade, and create tension, only the obedient 3-4 gable house may not.
I see the supposed broken boredom, that is the excitement, rather in the loudness of the house. The open space carries the sound louder upwards than expected, child/ren will sleep badly!

Due to the placement of the staircase and the conversion of the open space into a passageway, there is no privacy on the ground floor there. When visitors come for the kids, it will be annoying for all residents of the house. There is restlessness, quarrel, and trouble programmed in the medium term and it cannot easily be eliminated. That has nothing to do with character formation but simply with disturbing people in their needs, who just want to withdraw in the evening, be it with wine, a face mask, lightly ill or seriously sick. Others then have nothing to see or look for there.
The staircase is longer than the layman wanted and does not fit into the open space?! It’s not nice: if at all, the staircase should connect to a straight intermediate ceiling or not be realized at all. If the stairs are also supposed to be open without risers, then it will become a dusty and hairy kitchen.
By the way: the staircase seems misplaced in this bay, pushed into the corner so that the table also has to be moved. Sightline is unpleasant. This means it looks crooked and wrong at a glance.
Regarding the rest: some measurements are missing. If bottom left shows 3.17 including exterior wall, approx. 2.60 inside dimension is too little space for bed in the bedroom and sofa in the living room, unless it is supposed to be only 2 meters wide. Without paying attention to details, the guest WC is too narrow for shower and toilet together. The storage room is too prominent due to the slanted wall. The hallway is quite big, but where is a sufficient wardrobe for 4 people?
The only exit in the open space to the terrace is by the sofa ... which means only disadvantages, and basically, any furnishing is disturbing there.
Upper floor: due to the roof slopes you will probably not be able to walk next to the double bed, but only crawl over it. How much closet space is planned in that gable? I think that’s the maximum there.
Open space and staircase cutout in the ceiling were mentioned. What is the expensive gable in the open space used for? Where is the office door supposed to go?
Windows on the left side of the plan will probably sit too close to the roof covering; they need more distance from the exterior walls.
