The hip roof simply has an outrageous height if there is supposed to be walkable space underneath... Roof height at least 1.5 x as high as the ground floor below. Just to compare again:
Here the roof height with 28° pitch is about 40 cm higher than a normal story.
And for comparison, now again the hip roof with 28° (I would call that a healthy ratio)... but then there isn’t much left in the middle and windows don’t work well either.

And then you should still divide the resulting attic space once. So that you know why at least 5 sqm are used in the ground floor with the stair landing.
Here is a top view from an old design with a 35° roof pitch. You are right when you say the roof is very high compared to the ground floor.
The builder said that the costs for increasing the pitch from 25° to 35° are manageable. Do you see it the same way?
What do you think about raising the knee wall and only using a 30° roof pitch?
