Here are also a few points from me on this
Orientation of the house:
The first hint or clarification was already given, to place the house towards the east at the 8m boundary, and I would also prefer it that way. This results in the best possible use of the sunny sides in the south/west.
Drafts:
Personally, I would now prefer the 1st draft (open version). However, with the variant of the utility room and the staircase from the 2nd draft. I find the contour of the hallway to the door in the living area more refined that way.
I see the decision as more difficult whether to place the kitchen rather towards the west facing the street or to the east. A kitchen in the west would have the advantage that you can also see directly from there what is happening in front of the house, and you are active there during the day anyway. The living room in the east represents the quieter place, which does not need to be visible from the street. Furthermore, floor-to-ceiling windows could then be installed.
The technical room with approx. 5m² might be possibly too small? For example, with equipment such as a heat pump and buffer storage, etc.? Seen this way, one could, if necessary, enlarge the utility room by these 5m² and arrange the technology behind the garage towards the house. The roof of the garage, which would be enlarged as a result, would then create a covered area/parking space on the north side.

Garage:
Personally, I would remove the room and simply replace it with a long workbench. When working/crafting, there usually are no cars inside anyway. Shelves could also be placed on the wall side towards the back.
Ground floor (EG):
Regarding the drafts and kitchen/living room layout, I have already addressed this. About the guest WC, I think, why not use it if the space is available and therefore also integrate a guest shower, even if there is "currently" no guest room or other bedrooms on the ground floor yet.
Regarding the stair orientation, I see it as both an advantage and disadvantage to place it that way. If a landing staircase is desired, this can hardly be set in the north because it protrudes too deep into the room
(I believe it is about 3.4m). Thus, the house would have to be unnecessarily extended towards the south, which means sacrificing space in the south of the garden. Furthermore, if the view should sometimes be restricted by a hedge/or fence, it is still visible when walking up the stairs on the east side.
Upper floor (OG):
I find the solution with the master bedroom and dressing room wonderfully solved. Perhaps floor-to-ceiling windows would be suitable here on the east side, again to emphasize the view? Due to the protrusion toward the front door, which makes the floor plan of the house special, this space is now perhaps somewhat missing in the upper floor or the bathroom. However, nothing comes to mind right away on how to combine both. Hmm. *pondering*
I find the size of the children's rooms completely sufficient. Also, the size of the guest room/office. You can fit a 1.40m bed in there if necessary. Geometrically, the children's rooms should fit well too.
