The house and the location are simply dreamlike. We can only dream of such a property. Instead of renovating a bathroom for tens of thousands of euros, I would set up a sturdy pool in the garden for a thousand, your children will still remember it in 30 years, "do you remember, during the Corona crisis, all public pools were closed but we could swim so well in our own pool."
When the children are old enough, your wife can work full time and you will pay off the house.
With good financing, being thrifty and planned household expenses, if everyone cooperates, you can surely manage it.

You didn't address the household budget topic... could it be that you’re also a bit afraid of it (topic of a wasteful lifestyle)? The problem will be that you won’t have any buffer left for a new used car, a new washing machine, etc. A new house also means possibly a few new pieces of furniture. Surely you have some, but do they fill all the rooms as you imagine? New lamps, possibly curtains... if the bathroom is already the focus, then you go from one room to the next. Used houses are a good way to acquire property, but you also have to know that everything is used... I see potential here for wastefulness on your part... ... because the inheritance is also factored in. But what if grandma and grandpa had to go to a nursing home? That also costs a good amount and reluctantly a few thousand euros every month, money can disappear quickly—and if I were you, I would first assume that! Oops... hence also the planned bathroom renovation, so you can bathe in the mainstream? Surely it is not exactly what “one,” i.e. the mainstream, is building at the moment. But no, it is NOT SHABBY. Twenty years ago, the Nivea blue was completely in... in 10 years all our grey, black, and beige bathrooms will be outdated because then color will be back in. I have seen shabby bathrooms in other forums... You can conjure up a great North Sea feeling into the bathroom, then you don’t have to see it as nice, then it is nice—and has character. Such an amount would be a reason for me not to go to work anymore :D ... but seriously: that is exactly what separates you from others who can afford a house more easily. A normal (not extravagant) salary for both partners: one drops out or is reduced because of the child, then paths diverge here—either the situation remains “wife stays with the children and becomes a housewife” or “partner tries to bring salary home again soon and relieve the household budget.” The first couple will have a much harder time building equity. That means living hand to mouth. I don’t want to judge that! You also have to see for yourself whether kindergarten, grandma, or daycare provider is a better or worse alternative. Or whether you as a person feel more valuable working or just being a mom/housewife. You would also have good conditions with the combination of night shifts and day shifts. How your situation is, e.g., perfect grandma nearby, affordable daycare place, workplace near or far (one car/two cars), etc. you can only decide for yourself. But this attitude or situation may separate you from a property as you imagine it.

We also sometimes feel uneasy about the sums we've been confronted with since building the house; I'm sure many feel the same way.

For example, 55km south of Munich in Bad Tölz there's currently a house with 130sqm of living space for 1.2 million.
THAT! makes you ask yourself whether that's a good deal, yours seems like a dream bargain for just 40km more ;-)

Replace the bathroom lid for 50€ and it's already better. Then add a white/light bathroom rug on the tiles and it's actually quite nice. My parents have everything completely white. That may be neutral and no one says "eww," but I don't find it "nice" either.

How does your wife feel about the topic?
If you both share the same opinion, I wouldn't hesitate.
By the way, we had viewings where we definitely had to commit on the first viewing, otherwise it would have been gone. And once we actually inquired the day after, but it was already sold.
