I don't really like the "open living space" that way. The kitchen almost feels like a closed room because of the pantry, and the dining area doesn't seem particularly spacious either.
Regarding separate toilet + shower room upstairs: In some other countries, that is quite common (I know it that way from Japan, surely there are others). Of course, the drains have to be suitable (the shower is directly above the air, if I see that correctly – no idea if that works), but for me, there's not necessarily anything against having them separate. I think often the rooms are placed next to each other anyway, just because of connection reasons (but that doesn't necessarily have to be the case).
A friend of mine wanted that too (without any Japan reference) and in the end, he was persuaded to put a toilet in the larger bathroom "because that's how it's done"... and now it's basically only used if overnight guests use it before/after showering (so practically not at all) (otherwise guests just use the separate toilet).
Thank you very much for your feedback! We do find a little spatial separation okay, we will make the pantry a bit narrower. We also had variants with the dining area more central and towards the terrace, but we weren't really happy with that either.
