That ultimately depends on the requirements: if you want to rebuild a Viebrockhaus or the Flair 134 with an architect and also like the fittings, then I wouldn't build with an architect. If many craftsmen are personally accessible, then rather with an architect again. Anything that is supposed to be outside the standard is individual and possibly easier with an architect. But he can't work miracles either.

We are amateurs. There's no sugarcoating that. That's exactly what makes the decision and discovery process so difficult for us. :/

That's exactly our problem. We don't really know what options we have and which ones we want. Clearly, no one can take the decision away from us. But I hope there are some methods or instruments that can help with the discovery. We are currently overthinking it...

Then just take a piece of paper and start writing down what is important to you:
Space for hobbies / which ones?
Carport or garage or double garage and storage room for bicycles and garden tools?
Basement (apparently already counts as a condition for you since it's a hillside property)?
Open / closed construction style?
Gallery?
Children’s room?
What do you like? Search for photos on the internet
Brick, wood, or plaster facade?
Visit model houses and photograph what you like, whether construction style, layout, equipment, or anything else.
How many rooms and what amount of space is needed?

From this collection, an architect should be able to draw something usable. It won’t be perfect at first, but this is how you gradually approach the result...

Have you even looked at what you actually want? I mean, you usually look at new development areas and their houses in the surroundings, check out the signs of the construction companies, google their homepage, fall in love with one or the other. There are lovers of captain’s houses with double doors, loft character in the plastered Bauhaus style, the confident city villa, or the family-friendly and brick-clad gable roof house. Maybe you’re flirting with a Danhaus, but also have a soft spot for a traditional wooden cabin or actually want to put a monument in the village. Wishes that develop have to fit the plot and be compatible with the development plan. And then you check whether you even know craftsmen for the implementation (architect-designed house) or whether you find everything realized in a Viebrockhaus, Regnauer or Weberhaus.

My questions

I don’t really see that answered yet :-(

Too many options are helped by a specific plot of land and its development plan, which together are already the best decision-makers in this area. The third player in skat is called "budget," and suddenly the Neuschwanstein has already shrunk to a manageable size.
