For cost reasons, we are also happy to do without, but especially in living rooms, I would advise you to make this investment. I know there are various opinions on this, but we had it that way for a long time in our old house, and after installing the venetian blinds on the glazed south side, it felt completely different and great, because you can always adjust the amount of light exactly as needed.
Already complained....

The entire ground floor will be equipped with venetian blinds (except the north side).

I just didn’t see any venetian blinds there, I didn’t even think of roller shutters because many builders don’t mix those. But that’s enough then. I think of the clinker slips painted over in the tone of the plaster, slurry-coated or similar, and the same is also available in sand-lime brick – so your wife doesn’t have to think of coarse salami with clinker (or the more modern violet-tinged black olives). I would only do that between the kitchen and the office or between the bathroom and the stairwell where the wood is shown in the drawing; I wouldn’t make the color area in the bedroom darker than that of the “bay window,” and at the latter also pull it around the corner (down to the bottom edge of the children’s room / right edge of the dining room window).

We currently live in a similarly sized house, only our roof is pitched at 25°. A little room could be made, but without building a dormer there, it will be tight. For us, it’s more intended as a "hobby room for later."

In the same "later" where you move the bedroom downstairs so you don't have to crawl up the stairs every evening, then under the roof, yay, having a hobby room, is called practical dialectics.
