A few words about the rooms...
The pantry access steals good wall space for tall cabinets from the already quite small kitchen because of the passageway. As a result, the kitchen on the 6m section is planned well beyond the 3m limit, leaving just about 250 cm for the dining table.
Therefore, I would integrate the pantry into the utility room and basically continue the wall with the door to the utility room as a partition wall to the kitchen.
I also find the guest room with the loophole windows creepy. I would install proper windows there, and possibly in the living room instead of the two floor-to-ceiling windows with the sofa in front of them, use windows with a normal sill height.
Guest WC... with just under 190 cm width, you need to plan carefully whether the toilet and sink fit well opposite each other. Possibly a plan with a shower in front of the window, which could then also remain a loophole window. Although I don't necessarily see that as a better solution yet.
The bathroom upstairs is somehow awkwardly shaped. Almost 5 sqm are basically unusable.
The staircase is sufficiently long :cool: ... but I think the overlap needs to be checked carefully... see section:
The man on the stairs has 209 cm at that point... one step before it is less, and if you push off from the step before to go down, the headroom gets tight for people taller than about 180 cm.
In general, with the knee wall height and the opening direction of the bedroom door, the opening must be limited to 90°, otherwise the door always hits the roof slope.
Why only a knee wall height of 180 cm?

Knee wall height of 180 cm: that’s because we still want to have some space in the attic as storage. My husband and I are not very tall, so the stairs would work for us. But yes, we haven’t thought that far yet. What could still be changed here? The stairs are already very long and therefore rather shallow. Are there possibilities for adjustment here?
Pantry: You’re right, so we will integrate the pantry into the utility room. Then we will have one more tall cabinet in the kitchen. We would also push part of the kitchen down, so everything would shift downwards and more space remains for the dining table. I had also considered moving the dining table to the left, as there’s still quite a bit of space there.
Windows guest room: We will think about that. On the street side, I find a “large” window a bit odd, but the window next to the entrance can actually be larger, we’ll do that :)
Bathroom: The layout will still be changed and we will make a T-wall so that the space in the middle can be used as well.
