Of course, the question is whether the potential builder still sees potential to reduce the project somewhat in order to save and land at €425k. So far, he has shown himself quite understanding regarding the criticisms. On another note, of course, it remains to be seen whether the number is even still feasible given the currently sharply increased construction costs. That really makes the comparison gradually more difficult. But you have to calculate with something. (?)

Definitely. I rather believe that the situation is caused by a lack of communication combined with a lack of knowledge and honesty on the part of the architect and the OP. Basically, you rely on the person who knows what they're doing, i.e. the architect. But if they just sugarcoat everything and have little expertise, then you end up in deep trouble. How did you come across the architect? Does he have experience with hillside properties or why are you currently planning only with 12.5k€ for the exterior facilities? What you also need to be aware of is that you can’t just save on the costs of exterior facilities. Unless you have a digger with a loader and a driver in the family who provides you with equipment and labor free of charge.

For me, the crux of the matter is simply this:
"What income do you have (gross/net)? Both tax class I with €2,400 / €2,000 net. For me, a step back after changing industries as an entry salary with potential to increase; for my partner, rather small increases within experience levels or collective agreement adjustments will follow. For my girlfriend, it will come to about €1,400 if she works part-time after parental leave."

You can't build a house in that price range. No advice like "better build now before it gets more expensive" will help with that.

"Potential to increase" is hard to estimate if you don't yet work in the industry. The digital advertising industry is not exactly known for fat salaries and permanent contracts. Unless you are in management. But you first have to get there. The girlfriend expects a maximum of €1,400 in part-time. Parental leave losses have not even been factored in yet. Child costs not at all.
And doing work yourself on the construction site and pregnancy/baby is not exactly a dream life. It’s already not much fun with kindergarten and school children, even though you can conveniently drop them off with relatives for a weekend.

I don’t believe houses will become cheaper in 2-3 years, but the time can be used to save money (for example for parental leave losses) and to gain an impression of what the new industry offers. And to calmly plan how much house you want and need.

But that is ultimately the reason why you have to plan with a sufficient buffer. You can never calculate with the original offer amount, let alone take out the loan with pinpoint accuracy...

With a lot of input from forums, etc., you can already "imagine" what costs more and by how much compared to what is stated in the offer.

Children are planned. But not in the works yet :p So nothing has happened in that direction yet. That is planned for after we finish building ... Besides that, I certainly wouldn’t let my girlfriend help on the construction site while pregnant ...

If things should get tight, one could possibly deliver newspapers in the morning in addition ... or something like that.
