The basement/exit depends very much on the importance of the aviary. Only you can assess the priority.
What does the zoning plan say about terrain modeling? Excavations of almost 2 m are quite extreme.

Budget: We would like to manage with our own work, friends/acquaintances or companies (partly self-employed: heating, building materials, excavations, trucks, drywall installers, window installers, roofers) with 500k. The plot as well as incidental costs such as notary, authorities, taxes etc. are paid. The architect also has this info, so we are curious about his cost breakdown.
If at the end 50k more are necessary to implement our "must haves," this is possible.
There must be an aviary, so no house construction should fail because of this. If necessary, it might also be possible elsewhere.

Regarding the appointment:
Your planner has planned a ceiling height of 2.22 m in the basement. My plan provides for a minimum height of 2.40 m.
We’ll take that with us! The architect said that his planned ceiling height for the basement would also be sufficiently high for the study and the bar. Maybe it’s better to meet halfway here? I could imagine that we could go for 2.30 m.
