I would plan 3.50m from the top edge of the finished floor like this:
265cm ceiling height on the ground floor + 30cm ceiling would result in a "remaining knee wall" of 55cm. With a roof pitch of 35°, I would start the knee wall at 1.20m. I hope I didn’t miscalculate.

It would look something like this for me:



Originally, I wanted to extend the roof over both garages. But with the small knee wall, that’s no longer possible. So now I would probably give the outside a flat roof with a nice parapet. However, this is where the representation options of my program end.
Maybe it would look better if the outside garage was moved a bit into the garden to create a visual edge of the house. But that’s something the architect could have some fun with.

That you might miss the east sun on the terrace wouldn’t have occurred to me. Most people are happy to have south and west sun. I also don’t think it would be very significant. But of course, that is very individual.

well done .....is that a window in the kitchen (inside) ? Wouldn't it be better to have only one door to the living area ? That way the design of the kitchen would be even bigger .....otherwise really good work !

Yes, that is a window. It must be for light in the hallway and because of its beauty. Look:






I think the kitchen would also be big enough. Not everyone is such a master chef like your wife.

Then call yourself king: more usual is the limitation to one third.

If it is effectively still that much, that would be good - and in my opinion could be left like that except for a few spots.

And what do you want to do with those knee walls?

Now that’s what I call a successful accident / coincidence.

That would make it even nicer.

I'll get personal now, if I owned a company and you wanted to advise me, the first thing I'd say is: advise yourself first.

Well, not much. Catch mice and store air. Nobody crawls there because of the sloping roof. The 35 is really flat compared to the usual 40 to 45°. I hope the OP is aware of that. When I see the bedroom from #1, in my opinion, it is already very, very close to a misplanning.
