It's not about taste, but I also like it. The thing will probably cost you around €20,000-25,000 including chimney and static reinforcements for the wooden ceiling (if the fireplace will cost €15,000). And are you aware that you are not allowed to operate it often?

Give us the arguments why a bedroom in the east is nice? I don’t know your daily routine, but if you get up in summer in the morning, you don’t care about that. On weekends it is already farther away, namely towards the south. In winter the east doesn’t matter, just like the west, when it comes to the sun position. For bedridden people, but you are not one as you said, the east side is perfect.
Because there the morning sun rays greet you and because the southwest side now, according to the new draft as suggested by you, fills the entire living area.
I took that into account in the simulation. But honestly: where do the 35 cm come from? ;)
I read that here via the search function. We want 2.7 m room height after finishing. Windows always as high as possible, so that light can come in. Since we want roller shutters, we need space for them. That offers 30-40 cm. Then 35 was the middle. If you want to go higher, feel free to go higher.
Honestly? Since you won’t part with the scaffolding of the 15x15 villa anyway, why should I bother.
But I quickly drew a house with the room program and the orientation.. that would be the starting point for me.

Is it that bad? You choose the hedge yourself after all...
More space is always nicer, since it is a quiet area and the northwest side has a view. But the sun from the south is an argument :)
