We also have a counter in our current "rental house" and use it almost daily. For us, it is actually the more social focal point in the house.
Our kitchen is similar to the OP's.

I would make sure that at least one drawer near the stove is tall enough for oil bottles. Unfortunately, we messed that up in our planning. The bottles are now in the cupboard to the right of the stove. I'm not so happy about that.

I would consider whether there is a possibility to place a wall panel to the right of the tall cabinets (drywall, for example) - this way you could create a nice visual separation between the kitchen and the living room.

I can also add that I don't really like it when the trash is under the sink in the corner at your place. We currently have the sink with trash underneath in the corner and find it so annoying. When one person is washing, no second person can get to the trash or the water because everything is so cramped in the corner.

In the 60s next to the dishwasher? You're right. You're more likely to stand at the sink than at the stove. We also had a version where the counter was pushed out another 60cm so that no one would be bothered by the base cabinet with the waste system.... but I found the kitchen too prominent there. The garbage is definitely still an issue. I had also thought about drywall, but my wife is rather not keen on it.

The sink is, in my opinion, too close to the counter. I would place it as centrally as possible from the window. The top row is overwhelming. The front should be broken up. It looks very massive. I would personally save the money for the counter. Just for the kids' morning cereal, this expense is too much for me. It would be better invested in a range hood where you can't bump your head. A hood with a slanted, all-around extraction.

The Ikea price surely does not include assembly, right?
Which appliances are supposed to be built in?
What is the actual saving (all in) compared to a kitchen planned by a specialist retailer?

Without installation - that would cost 1800€ at Ikea. The devices cost about 3700€. The savings are therefore about 2000 €. (13 T €-1800€-3700€-5500€) Quality is unclear for both.
