If you make the fronts yourself, then you are not dependent on Ikea's dimensions. For example, you could have drawers in 35 - 35 - 10 or 35 - 30 - 15 or .....

Oh, I had completely forgotten about the 80 cm sink cabinet... I want to have a double sink, hence the large one!

... so, if the dimensions in your plan are correct and you place a base cabinet of 80 and 60 cm under the window on both sides, you will have about 4 to 5 cm for the panels on each side, which should actually be enough for handles, most of which are about 3 cm deep.

Otherwise, you can simply try it out. Since you need 60 and 80 anyway, put them in place, try it, and if it doesn't work at all, replace the 80 with a 60. I don't know how far your IKEA is, but it wouldn't be a problem for me, the nearest one is about 5 km away from us .....

... one more thing about the sink. We had stainless steel for decades, it practically lasts forever, but you have to clean a lot. It’s basically a matter of taste, everyone swears by something different. I wouldn’t take a sink from IKEA, because there (as I have read everywhere here) special siphons are necessary.

I am currently also planning an IKEA kitchen for our granny flat. Two years ago we renewed our kitchen (though not IKEA, the Faktum didn’t fit well with our layout wishes back then) and had a sink made of artificial granite installed. We are very satisfied with it. On the kitchen builder’s recommendation, we chose a sink in dark brown; light colors are supposedly rather sensitive. You don’t see water spots, and the water in the basin doesn’t cool down immediately. You don’t have to polish or anything. The only thing is, we once made a scratch in the basin, but I don’t know how that happened...

If you search online, you can get them quite cheaply. With your wish for 2 basins and draining board, it will probably cost you about twice as much as the stainless steel IKEA sink.
