We have solid wood ceilings, a full 25 cm thick + filling + screed. In principle, it should work. I don't think they are cheaper than concrete. We have a solid wood house; with solid stone on stone, I would instinctively choose concrete. My neighbors designed the house dimensions so that precast concrete parts could be used for cost reasons.
Take what your builder can do. The unknown will be more expensive, and better is questionable.
The budget is tight for this size. I don't want to say it’s not doable, but you can forget about KNX, photovoltaics, and the like. Doing work yourself will hardly be possible with 4 children. You will need a Nordlys setting. The water from the Ikea faucet is the same as from an expensive designer faucet. What do we really need? If someone doesn't drink coffee, they don't need a fully automatic machine just because it's trendy.
