I find the house very nice; I like the style. I also think the floor plan is successful. From my side, just a few more tips.
I would straighten the bay window as well, so that there is enough space for the bed at the top in the bedroom (move the bed towards the window) and at least one wardrobe can be placed along the wall at the bottom of the plan. I would extend the recess for the office all the way to the roof edge at the top of the plan and install a built-in wardrobe along the full length. In other words, make the bedroom bigger, the office smaller. I would move the door of the master bathroom further up because it tends to get a bit wet in front of the shower. Also, plan a proper door instead of a sliding door. Because of noise. There is plenty of space anyway.
On the ground floor, I would make the utility room flush with the house and rather move the garage forward by two meters and dock the veranda onto it. You won’t store saddles and horse stuff next to freshly washed laundry, will you? Incidentally, I know how bad that smells. I would use the garage extension for that. By the way, the garage is too long if it is to be on the boundary as in your Idea 4. I would also rotate the house towards the south.
If you really want to plan ahead for old age or (temporary) mobility impairment, give the ground floor bathroom a reasonable size right away and take that from the utility room as well. However, I cannot imagine that you would feel comfortable there permanently while the upper floor stands empty after the children move out. I would rather install a stairlift for that.
For the wardrobe, I would probably use the space under the stairs with built-in closets. Then you could eliminate this somewhat senseless mini wardrobe and give the space back to the utility room.
