I find the house very beautiful, I like the style. I also think the floor plan is successful. From my side, just a few more tips.
I would also straighten the bay window so that there is enough space for the bed at the top in the bedroom (move the bed towards the window) and at least one more wardrobe can be placed on the lower wall according to the plan. I would extend the recess to the office up to the roof edge according to the plan and install a built-in wardrobe over the full length. In other words, make the bedroom bigger, the office smaller. I would move the bathroom door of the master bathroom further upwards because it always gets a bit wet in front of the shower. Also, plan a proper door instead of a sliding door. Because of sound. There is enough space anyway.
On the ground floor, I would align the utility room flush with the house and rather move the garage two meters forward and dock the veranda to it. You won’t store saddles and horse stuff next to freshly washed laundry, will you? I happen to know how that stinks. I would use the garage extension for that. By the way, the garage is too long if it is supposed to be on the boundary as in your idea 4. I would also rotate the house towards the south.
If you really want to plan ahead for old age or (temporary) walking disability, give the ground floor bathroom a reasonable size right away and take that from the utility room. However, I can’t imagine that you will feel comfortable there permanently while the upper floor is empty after the kids move out. I would rather install a stairlift.
For the wardrobe, I would probably use the space under the stairs with built-in cabinets. Then you could eliminate this somewhat pointless mini-wardrobe and give the space back to the utility room.
