I would now move the sink a bit to the side so that there is only a narrow edge to the border (about 15 cm). On the side you choose, you can then also install the dishwasher raised in the wall unit (counting from the edge, first or second cabinet. Better immediately the first). Then you can, with one movement, scrape trash into the hopefully raised trash under the countertop at the island, quickly rinse plates if necessary, and with a turn put them into the dishwasher. When unloading, you will inevitably have all the dishes on only one side of the dishwasher, which is very practical.
With Ikea, a dishwasher can be very easily installed at a raised height. That is no problem.
The two small towers are ideal xxxxx storage. I hope you know that. I would go, as in your first draft, rather floor-to-ceiling. That looks a bit more pleasing visually. Especially because you are always with the kitchen in one room.
I think you have planned a drainer with the sink. You can leave it out, not absolutely necessary. That then creates more workspace.
Perhaps I would consider making the island a bit less deep. Not under 80, but 90 or so would be very good for working and help to recognize the structure of the room. So, then the distance from the island to the living area becomes a bit larger. Shortening the island is woodworking. Just shorten so that you come to a size that corresponds to a number of Ikea fronts. I once had 90cm and used 3 fronts of 30cm as the side panel. Looked good.
I think one can feel comfortable in that room.
