Are there also approx. measurements for this? And why isn't the garage on the north side?

The basic dimensions of the plot are still missing.
And then I wonder why the knee wall of 1.20 is rated so negatively when there was also a desire for a bungalow.
In this respect, I would make full use of the maximum footprint of the house, plan a nice open living area with a separable library in the west, and possibly a hobby room if there is space, and put bedroom, bathroom, storage room, and multipurpose room under the roof (35-45 DN). The dog has space downstairs, the library enough evening sun for reading, and if another child comes, either the hobby room (if it is sufficiently large), the library, or the multipurpose room upstairs can be used.
So I would not go upwards but rather exploit everything in width.
The carport in the front north corner, that creates the entrance to the street, the southeast side (terrace/garden side) with kitchen and living room, then the library in the west corner. Staircase roughly in the middle on the street side.
Save costs on dormers and statics, lay the load-bearing wall in the middle and use it as a grid for the rooms. Simple double windows, but more of them instead. Possibly open the gable opposite the staircase in the attic and use the walls there as shelves.

A knee wall of this size completely substitutes a dormer and is therefore, in my view, excellently suitable; regarding the avoidance of a full floor, however, I believe only after calculating that 45° pitch is not already a bit too much.

or rather, whether it would be correct to think of a new attic floor regarding that stated ground floor plan in its "original dimensions".

I'm not sure if I understand that correctly. As it currently looks, we have about 68 sqm available on the ground floor and less upstairs if you go by the pure living area. It is calculated according to the net living area (roughly speaking the floor area - and that adds up to 135 sqm. It doesn’t matter if upstairs (and thus overall) there is less living area). Making the ground floor generally larger and having a smaller “structure” upstairs will not work because it does not correspond to the customary local construction.



I tried to roughly sketch that out - but I’m not sure if I got it right. Ultimately, the entrance on the street side gives me difficulties – I can’t get it properly sorted without the sofa being almost directly up against the TV, etc. I have the feeling it can be better divided if the entrance is on the gable side. But that might possibly look bad from outside and maybe wouldn’t quite fit structurally... it’s better if the planner thinks about that.



To be honest, I don’t understand the overall dimensions of the mentioned ground floor plan 100% (11x8.25) – I’m too much of a layman (is that simply the gross area?). But if I take the square meter areas of the rooms, I at least get a similar size on the ground floor as we have available. I tried to set that up roughly in the drawings, with a somewhat different furniture distribution... and distributed accordingly to the orientation of the house.

That wouldn't be a truly original "method" to engage in first-class bait-and-switch with the price per square meter. You mean some kind of "stepped floor," just not flat-roofed? - I would agree that this wouldn't work here. I can't quite follow that: where would the structure be a problem with an entrance on the gable side? Those are exterior dimensions.
