Two full stories are permitted here and are allowed anyway. The transverse gables – by the way, I would spare my house from hip dysplasia, executing one of them with a risalit and the other as a cross gable – do not necessarily require such a pointed saddle roof, whose space the OP reportedly does not need at all. In your post #10 there is a floor plan – incidentally revealing a building depth of eight and a half meters – and the OP can look for the elevations in the house pictures thread*. Reloading all floor plans from from my archive here would contradict his expressed interests and would not promote knowledge gain here either, since inspiration is not supposed to be a copy template after all. Do I understand you correctly that your main concern is the height of the roof, which would be much more aesthetically pleasing if it were lower, since the space is not needed anyway? If so, I agree with you.

Yes and no, I hold the justified hope for the healing of the main gable facades if a shallower roof pitch weakens their high-pole orientation on the ridge purlins.

Well, starting from the facades in post #99 as a raising of the eaves roughly to the height of the intermediate purlins there and lowering the roof pitch to about half. Then the main gable-side facades become less pointed and their windows can escape this by hanging their axis of symmetry as a plumb line from the ridge purlin. And voilà, the expression of these facades relaxes.
