That would really be an option you should inquire about again. Why? You have to build the roof anyway. The area underneath always exists and is simply there. Making the ceiling load-bearing and insulating the slopes costs money, but is cheap compared to the gain in space. Or put differently: not using the enormously large area under the roof is a waste. But for that, a certain pitch and height are needed.
