Well, not everything is consistent where it says "concept" on it.

Where ... here?

or here top left?

Is it really too much to ask to mark it clearly? And, is it too much to ask to always upload floor plans with a uniform orientation?

In at least every 2nd thread about floor plans this is repeatedly criticized. It’s boring and at least it prevents me from thinking further.

First drawing. You also have the software with the shadow visualization. Did I already say that. I don’t know the second sketch. It must come from a PDF...

Well, because of the beauty. I haven't seen a nice chimney on the outside of a house yet. But it might still happen.

Regarding the orientation:
I understood it like this:

The original poster writes endless explanations for this and that, but he doesn't want to change the basic problems.

Man, first take a look at your staircase. Until it reaches at least an approximate normal condition, in my opinion the whole discussion about tables or windows being too narrow isn't worth it at all.
Staircase width (at least internal dimension) 2m (better 2.20m) x 3m please mark it out and see what the rest does then.

About the upper floor:
that's really a mess, but I suspect it's relatively easy to fix.
Usually one tries to separate the parents' area and the children's area a bit and give the children the sunny side since they don't just sleep there. Of course, it also depends on the rest. If the street in front is a highway, the situation looks different again.

What I haven't quite understood yet: apparently a wide corridor is desired - that's clear. But does it also have to be that long and does the front door really have to be at the bottom of the plan?

... and I suspect exactly the opposite .. based on two perspective images from the PDF file in the initial post. And all this guessing would be resolved if a floor plan included the north arrow.

A grand, spacious house for €300,000?
I don’t even need to start discussing the staircase... let’s just let reality crash into wishful thinking, that already clears up quite a bit.
For upscale fittings, you can calculate €2,300–2,700 per sqm (unlimited upwards, even at the price given here not everything is high end), so now fire up your calculator.

The floor plan (and all variants) is simply rubbish, so I’ll skip going into details. I believe it will be difficult to reconcile your dream with your budget. I think I can guess what you have in mind, but you’d almost have to double the budget for that.
To plan something sensible with the given budget, you’d have to give up beloved ideas and wishes.
So, in short: you have to bite the bullet.
I fear that since the budget certainly can’t be infinitely expanded, even though there’s some room upwards, you’ll have to sacrifice some of your wishes and ideas.

And to gently ease into the matter, here are just a few basics you should think about:

The kitchen in a 180 sqm house should comfortably provide space and be sensibly planned in terms of workflow. The kitchen in the plan is small and does not look appealing.

Dining area: you want a generous sense of space, but here it’s being cut too tight. Adequate space for a nice dining table means at least 1m of space all around, and a minimum of 60 cm table width per chair (that’s the minimum, not generous!). What’s drawn here tends to have little to do with a spacious, nice dining area.

Instead, there’s a hall for the living area. What are you doing there? Think about what normally takes place there. Usually, you sit on the couch, read, watch TV, lounge, drink some wine, etc. But you don’t really need this gymnasium. Now consider where I actually need more space.
What is the purpose of the glass wall between the dining and living areas? Do you believe it will ever be closed? (Just as a thought exercise)

Why a partial basement? Have you ever requested a quote for a full basement? The difference is negligible and in the current design I find a massive lack of storage space for a 4–5 person household.
If basement, then make it a full basement. If not, you still need lots of good ideas for freezer, utility room, and storage.

A captive dressing room doesn’t make much sense; better to be able to enter and leave the dressing room without disturbing the possibly still sleeping partner in the bedroom. With this space that should be possible.

180 sqm and maybe three children; I’d already consider a children’s bathroom.

After you’ve thought all this through carefully and maybe also know how you want your kitchen, take another close look at the stair dimensions and then assume what floor area you have available according to the development plan, design a rough room program where what should go and where you want the stairs. Then the staircase comes FIRST and then you try to distribute the rest sensibly.

Personally, at that size, I’d always want a utility room on the upper floor to do laundry there. But that’s one of those topics on which opinions vary. But maybe you could also think about it.
