The windbreak is unnecessary. It really brings nothing. But if you extend the wall up to the edge of the overhang, you can pull the kitchen down and get a rounder hallway. I fiddled around with paint.

I have attached our bungalow for you. What I love: central hallway where I can get everywhere quickly, which has a lot of natural light. You’d be surprised how often you walk through the hallways in your own house.
You could easily install a staircase in the utility room.

In general, I find L-bungalows much easier to furnish.

THAT is a good attitude.
Therefore, at the beginning, I would let go of any unnecessarily limiting parameters. You want a house whose layout fits you perfectly. I wouldn’t stick to a specific roof shape either and possibly limit other options because of it. A beautiful or less beautiful house is possible with all roof shapes. It must especially fit on the INSIDE!

Thanks to everyone already for all the feedback (in less than 24 hours). Great forum :).

The discussions have triggered another thought process for us, whether we should do without the closed kitchen, which was actually planned, in order to have "fewer hallways" and, in return, more brighter rooms.

We may also be considering placing the staircase differently or making a landing or L-shaped staircase (even though the straight staircase was our favorite so far).

We have had 2 apartments with a closed kitchen so far, the door was always open or taken off, and when guests were over, all the women were in the kitchen to hear everything, since 1995 only open kitchens, it's more sociable, observe yourselves for a change
