That is the big question. Covered with clay tiles (now about 60 years old), there are definitely voices claiming that they can last 80 years. But either way, it's certainly a risk and something that ultimately a professional has to assess.

Keep saying no. You are so attached to your top salary, that's not healthy. I would see it differently if the 6.5 net were divided into 4 and 2.5 or similar, but with 3 children one partner can simply only work very limited hours.

But the top salary is in the public sector as far as I remember? I also believe that the blanket assumption that a parent with 3 children cannot work much anymore is no longer generally correct today. It strongly depends on the environment, the care situation, the parents' attitude, commuting times / home office, etc. We need to get rid of this 1950s mentality.

I assumed that regardless of whether it's the public sector, with 10k gross per month it doesn't necessarily stay at 40 hours. Such a salary usually comes with (management) responsibility. Home office is unfortunately also a difficult topic here. The top earner usually can hardly cover the everyday demands. If the grandparents live nearby and are willing to step in, that's a different matter. But do they want/can they do this for 15 years?

If you want to replace radiators anyway, why not switch to a heat pump right away? With the current efforts to move away from fossil energy, I would be concerned about switching to gas now.

180 sqm and €150,000 renovation costs where (it sounds like) pretty much everything should (not must) be done -> no way. The stress with the payment is not worth it to then be stuck in a semi-good place :/
