Almost everything matches light gray, but the color looks very artificial in wood finish.

So would you prefer light gray concrete look? That would be our alternative. On Friday we now have an appointment with consultation and floor plans.

While I'm at it Can you say that certain formats don't fit certain room geometries? The wood-look tiles would be 90x20.
Can you estimate what the additional installation effort for such a format would be? Our construction manager said that for tiles up to 30x60 it’s all neutral, above that surcharges for oversized formats would apply.

What are some other neutral, unexciting tile colors? I like slate, but I'm afraid it only moderately fits our not particularly avant-garde lifestyle
I still find terracotta cozy, but my wife doesn't want that.

I saw a sample tile in concrete look from Ceramica Celtica in 60 x 60 with a gray tint, I have 6 sample tiles, laid them out at home but the gray appears very cool, beige would be a warmer tone.

My wife had said the same. But in the store, she also preferred gray. This 90x20 tile was also available in brown, but it had too many knots (as ironic as that may sound for a tile).

Take a look at sandstone-colored ones, there you can find light gray as well as beige. Because of the light combination, all woods and surfaces match. I have posted an example on my blog. However, I also find concrete look very interesting.
