But a question about building out the walls. Would the following construction make sense?

Existing wall | 4cm wooden battens + rock wool | 12mm drywall
The dew point should currently already be within the existing wall, but due to the moisture-regulating wood, that should actually not be a problem. The additional insulation could shift the dew point further.
Is 12mm drywall sufficient, or should it be double-layered? If I want to attach something, I would have to use long screws anyway that also reach the wall behind. But is it still load-bearing then?
At the ceiling, battens and one layer of drywall should be sufficient to install, for example, recessed spotlights.
