Enlarge and fully renovate a single-family house or demolish and rebuild?

Upper floor:
This is very difficult for me. We really like the open space above the dining room as it gives the room a certain flair. What do you think of our first floor plan idea?

I basically see good chances, however, the floor plans of all three (please again so that the dimension chains are fully visible in the picture) and also the section would be much easier to "read" if you photographed them frontally instead of diagonally. The ceiling plans from the structural analysis would also be very helpful. Keeping the roof in profile reduces some costs. The open space especially in combination with the room divider fireplace will bring nothing but flair to the overall composition.

I have done my homework! Attached you will find the current ground floor layout and the desired layout with the extension (marked in red). Basically (from my understanding) we are not changing much in the layout, except of course for the extension :) Can the breakthrough work like this?

The second question is: How are we going to do the upper floor? We would like to make full use of the room height and build a shed roof. Is that possible or are we getting ourselves into trouble? Maybe someone has information for us?

Then I wonder: if we raise the walls on the upper floor, how do you achieve uniformity with the lower masonry? Plaster everything or only plaster the upper part? What would you do?

Year of construction 1965, not much changed since then ;)

Judging by the sketches, many walls seem to remain as they are. The extension now only goes in one direction and the exterior wall remains. Overall, this makes a noticeably more "realistic" approach than your first sketch, and I can well imagine that this will work for the ground floor.

Then the question about the shed roof comes up again and the desire for actually two full floors, and then the question arises for me again "does that still make sense?" or is demolition and new construction the better solution. What is the upper floor supposed to look like? The extension is supposed to be raised to the upper floor as well? Judging by the photo, the roof on the garden side seems to be set higher and actually fulfill the wishes. One trick without completely rebuilding the whole roof (i.e. with the supporting structure) might be a large continuous dormer on the street side. (Example image)

The ceiling plans from the structural engineering would also be very helpful. Keeping the roof in profile makes things cheaper. The air space especially in combination with the room-dividing fireplace will bring everything other than a flair into the overall composition.
