Do you need the children's bathroom upstairs? How big is it? Can the gallery (which isn't so great with 3 kids anyway) be omitted?
I don’t find the bedroom that tight at all. Room width 3.70m. Let’s take a bed 1.90m wide – a common size in small houses – then you have 90cm on the left and right to walk. If grandma now depended on a wheelchair, you could still push the bed up to 20cm towards grandpa.
I would really try to get the technology into the intermediate building. Then this would be my latest version with 1m doors for the seniors:

I would at least enforce the 50cm for the wardrobe. Under the stairs – you’re already standing there with your clothes and shoes in the living room. You won’t even notice the 15cm wall offset for the guest room. The wall will simply be set in front of the bay window instead of next to it. You lose 0.09m² of living space but gain a proper wardrobe!
For the kitchen I would make sure that the 3.60m are maintained. I would only put the narrow decorative wall to enclose the kitchen cabinet if there is enough space for it. But it would look better because otherwise the door to the guest room looks so squeezed to the edge. But it’s enough if the 5cm drywall is used.
Yes. We were torn back and forth for a long time, too. That’s why we really think the solution is great now. I assume anyway that our older son will voluntarily move to the ground floor in a few years to have some peace from the little siblings hahaI think the huge bathroom for the Eltis is wonderful - but that it is only used for the Eltis is somewhat a shame, isn’t it? Giving that up for a 3rd bedroom upstairs, I would do that too if child 3 were already here. But if it doesn’t work out, the dream bathroom is gone and child 3 too. ops: Difficult decision.
