I would leave that short wall standing and then move the tall cabinets there. Then an L-shape or immediately a huge island across.
Yes, the wall is suitable for enclosing the tall cabinets. It would then also be suitable for an aircraft carrier island. And there would also be a spot for the SBS.
I have prepared a furnished version again and removed all the walls that we will take out.
we would actually like to place the SBS against the wall, we were aware that everything would be more complicated due to the shape of the kitchen, but I did not think it would be this complicated.

Yes, you already showed that in the opening post, and that is not exactly the "bee's knees," meaning it is neither ergonomic, functional, nor sensible in many eyes here. Basically, I do not see a complicated kitchen shape now, but your intended kitchen does not fit there. This standard mass-produced kitchen (sorry to those who have it or where it fits) is simply not suitable for every room.
I would then, however, swap the sink and cooktop in option 1 or 2, depending on whether you want to slavishly follow the three-step sequence of refrigerator - sink - cooktop or - which has proven to be more sensible for us - prefer refrigerator - cooktop and only occasionally sink.
