I hope - also thanks to my father - to be able to significantly reduce the costs by handling the electrical planning / floors / walls etc. ourselves.

I am no longer involved in this topic myself, but it should be noted that these costs or trades (except for electrical work) are usually no longer included in most general contractor contracts anyway. It is somehow always all top-notch.
You are building at a time when one should plan somewhat strictly.
