Waste on the construction site - What is tolerable?

Yes, as a non-smoker but bucket owner, that's how I would have done it. And that's trashy. Period. If no one says anything, it sneaks in and later becomes normal: Everyone does it. The funny thing is that no one says anything because they don't want to be unpopular and thus miss the chance to be the one who says what everyone thinks anyway. If you have been the one who has to clean up after others a couple of times, you eventually either speak up or become the cleaning lady everyone smirks at.

On our yard there is now a pile about 1m high of gypsum residues from the interior plaster. Nothing was agreed upon regarding waste disposal, and nothing is mentioned in the offer. Do you think it is possible to demand its removal, or do I have to take care of it myself?

I would discuss that with the construction management or something similar, the plasterers could take care of it. For us, the Achmeds were also very messy, but the main contractor boss then made sure they cleaned up their stuff, they brought a huge sack for it, everything went in there, plaster residue, empty bags, buckets, etc.

Just send a request to the municipality like here and wait (like we are waiting for your answer) for their response. Maybe then you can remove the stuff in a year.

It's starting to scare me here: are you adults or just pretending? If you can all just sit out your rights, then fine! But life still takes place in reality, not here. In the meantime, you all could have disposed of the trash (yes, the one others made) on your property. End of story. But no, here it's asked: do I have to or not. As if you don’t have enough worries in construction.
