Yes, the thing about priorities probably hits the mark. Although if we were earning 8k a month, then the 15k for a kitchen would also be no big deal, topsy-turvy world....
But seriously, we have a relatively small kitchenette plus an island from a solid brand. For this, we inquired at several stores. Even in the larger furniture store, it cost about €15,000 with Siemens appliances. In a kitchen store, we ultimately paid about the same, but with appliances from Miele (large induction hob with 6 zones and pot recognition etc. (the largest at the time), XXL and supersilent dishwasher, larger oven (although I don’t see the difference), supersilent fridge, etc.). The sink is not stainless steel; I just don’t know what the material is called, but it hardly scratches at all, only drawers, lower plinth (stainless steel) and at the same time higher countertop, so overall more storage space, glass counter, and things like sockets in the countertop, etc.
We can of course "kill ourselves" with kitchen details.
This saying comes to mind (which I don’t endorse) "... from Siemens or you may be something good..."

For this, we requested quotes from several stores. Even in the larger furniture store, it cost about 15,000.- € with Siemens appliances. In a kitchen store, we ultimately paid about the same, but with Miele electrical appliances (large induction cooktop with 6 zones and pot recognition etc. (the largest at the time), XXL and supersilent dishwasher, larger oven (though I don’t see the difference), supersilent refrigerator, etc.).

If you’d only looked at the price, it certainly could have been cheaper, but whether it would have been less expensive is at least questionable. Even via Idealo, I think the electrical appliances alone would have cost between 6,000 and 7,000.- €. The whole thing, as I said, in a relatively small kitchen.
BTW, the kitchen builder even showed us the price of the "individual parts" in the program without block billing or whatever they call it, and there was almost a 4 at the beginning (TOTALLY CRAZY!!!)
Since the OP apparently wants to build rather large, I guess the kitchen will also be bigger. That means more furniture, so at the same or higher level of equipment (for example, we don’t have a steam cooker) even more expensive.
Of course, we can "kill ourselves" with kitchen details. At first glance, I don't see a big difference (apart from the induction cooktop with 6 vs. 5 burners as well as the glass countertop, which we excluded with the argument "small child"). There is also an elevated work surface for tall people in our kitchen . I can explain the bigger oven to you. For some time now, there have been larger ovens (formerly "standard size") and more compact appliances. Presumably, the smaller oven would have a lower consumption (less volume to heat). We also consciously chose the larger variant (a 7 kg turkey or a goose would never fit in the smaller one ). An oven at chest height also received multiple praises from my mother, mother-in-law, and friends .
By the way, we played two potential studios against each other. With both, we started with the same specifications. After the first round (negotiating the price to a normal level), we then took the cheaper price offered to the competitor and asked what they could do. This game was repeated several times over a period of 3-4 months. When price negotiation was no longer possible, the studios improved the appliance configuration. But you have to be careful that the partner 1. does not show enthusiasm or similar and 2. does not fixate on a specific detail. Because of the second point, we ultimately had to pay an 800 euro surcharge compared to the best price, since my wife absolutely wanted THAT kitchen countertop. She didn't accept smaller nuances. For that reason, the cheaper studio was out of consideration.
