I wouldn't necessarily rely too much on the opinion of the kitchen salesman. There are certainly some bad apples who will tell you whatever you want to hear so that you buy a kitchen.

By that I mean ... 100 cm cabinet, 15 to 20 cm space towards the edge, depending on the cooktop width, then the cooktop. And then a 60 cm/40 cm cabinet. Base cabinet with waste system .. I like it next to the sink because that is my main workspace. Row spacing ... I have a good 90 cm. You don’t need 120 cm to open opposing drawers at the same time, since the drawers are only about 50 cm deep. And, you also have to ask yourself when do you actually do that. I’d rather plan island depth at at least 110 cm, then you can plan with standard-depth drawer base cabinets from the kitchen side and with drawer base cabinets reduced by about 10 cm from the island backside. I think a side-by-side fridge looks better in a tall cabinet wall when it’s flanked on the right and left by, for example, pantry cabinets. Liebherr offers a fridge/freezer combination ICBNi3386 with ice maker (including water connection) in the freezer compartment. There are also the integration-capable ECBN5066 (76 cm wide) or ECBN5256 (91 cm wide).

Understood.

If that is the reason why > 1m is often recommended, I agree.
I cannot yet assess the required freedom of movement,

Ok, understood. But I would say this cannot be done differently here?
Oven and coffee machine stacked on top of each other wouldn't be nice either.

In our internet research, we often came across 1.20 as a reasonable distance, our kitchen planner automatically took 1.20 without consultation. We have recreated this in the current kitchen with chairs and found it good. One can also stand at the sink (row) and one at the stove (island) without getting in each other's way. If there is enough space...

120 cm is a recommended standard size that never goes wrong. However, there can also be other solutions in practice. And that then depends on how much space you want to have in the living area, etc.
Also, 90 to 100 cm line spacing is quite practical opposite the sink/cooktop because with a half turn you are on the other side. And it is recommended not to have the cooktop and sink exactly opposite each other, but slightly offset to the side. All of this can be read up on in the already repeatedly mentioned forum and also visually understood based on many practical kitchen plans in the most diverse rooms. I’m just mentioning the gallery and user reports in the area of completed kitchens. (google is everyone’s friend )

In the end, every kitchen must be planned according to individual usage habits. Normally, anyone who wants to build a kitchen should already have one beforehand. We approached the topic by asking what we do not want, because it annoys us based on our experiences, and what we need, because we habitually move in the kitchen in a certain way.

This approach has, for example, led us to know that we never want a handleless kitchen again.
