I had already suspected that

We can easily imagine putting the guest bed upstairs and slightly enlarging the utility room. Would you then need an additional guest bathroom upstairs or would one downstairs in the stairwell be enough? By the way, about upstairs: We have considered whether a full story with a hip or shed roof might also be an option. This would of course make us much more flexible on the upper floor. However, I have no idea how the costs compare to, for example, a 1m knee wall with a gable roof.

How many guests do you have?

A shower bathroom upstairs by the guest would be very comfortable. It would also have the advantage that the teenage daughter could move upstairs.

With regard to the budget and the shape of the utility room, I would then get rid of the guest bathroom downstairs.

The HT would go upstairs, but I would leave the laundry downstairs.

Roof probably gable roof without dormers etc is the cheapest solution

I have always heard that a shed roof is the cheapest.
A gable roof would have been "only" about 4000 euros cheaper for my GÜ than the hip roof that I have now.

If the heights and the design integration work out, the straight-wall upper floor solution is the better choice because it is cheaper: with a knee wall the roof structure would be habitable and only need to be constructed with rafters, whereas separating living space and the roof structure would allow for a cheaper truss roof. This should be about the same price in a gable form with the same house size (= so without increasing the total volume through the full floor), and even cheaper in shed form (a true shed, single-pitched). A hip roof is always a price premium, with roof structures and/or over a non-rectangular floor plan even one with gold dust.

I cannot remove the sewing machine and it has to be taken into account first.
It is hard to say how many guests we will have.
There would be another grandchild who might stay overnight with Grandpa. Our friends and family are quite scattered, and we would like to have visits more often and also be able to provide a proper place.
I think I would miss the second toilet on the ground floor.

Thanks!
If I understand you correctly now, can I assume that a full upper floor with a simple shed roof has similar construction costs to a gable roof on a 1m knee wall?
Almost all the surrounding houses have a gable roof with a knee wall. Two houses have at least partially a full second floor, and one of those has a hip roof.
We don't have a shed roof here directly.
