Which areas in the bathroom are tiled?

I assume you haven't planned a door in the shower, right?
I would definitely tile the wall behind the washbasin all the way to the top as a highlight.
As long as you are careful when bathing, you don't necessarily need tiles on this wall. If it gets wet, it will dry again, and people usually bathe less often than they shower.
In the shower, I would tile the wall at the top up to the height of the T-piece. I would also install a towel rack/heater on the small wall next to the window at the top.

Edit: I would connect the bathtub to the T-piece and place the washbasin opposite against the wall. This way you have a bathtub that is open on three sides, and behind it all the way up, highlighted with a nice decorative tile. The one that is still coolly illuminated and the dream bathroom is complete.

You have an open roof structure there?

Then in the shower only as high as the partition wall (for us about 220), toilet, washbasin as high as the installation base, bathtub tiled, behind the bathtub the tile height either aligned with the tiles (so that no cutting is necessary) or in some relation to the window.

We have white wall tiles and dark floor tiles and did the bathtub with the floor tiles. Since we have a very bright bathroom, that works well; without our large double-leaf window it would probably be a bit dark.

What I want to say: you don’t have to have the same tile height and type throughout the entire bathroom. That can also create distinct areas quite well.

Here the shower, tiled about 220 high (as high as the shower partition wall was), above it is open to the roof structure and therefore "tiled to the ceiling" was never really an option.

The shower from the other side and with the washbasin – there the installation base was also tiled (namely the horizontal areas with the floor tile):

Around the bathtub we took the tile size as the measure: more precisely; one tile above the bathtub edge:

And then extended that all around; but limited by the double-leaf window there:

As I said: the tub was inset with the floor tiles and we then also used them for the wall in that corner. That fits very well there because a lot of light comes from above through the double-leaf window. Otherwise it would have become too dark for me. Here with only light tiles it probably would have been glaringly bright.

But overall we have three different tile heights and I don’t think that looks inconsistent. The areas are clearly separated, so it works. Of course, it always depends on the bathroom.

Your shower backsplash is about 2m from the opposite wall - with us (just measured) it is about 2.4m and in our case this wall is painted with latex paint, so water can splash on it sometimes without the wall getting soaked right away. So far, however, even during bigger shower sessions, we have never splashed water all the way to the wall, only the floor gets wet up to about 2.2m. That would mean your wall might get wet in the lower area. So maybe tile up to the windowsill height? By the way, I find Alessandro's suggestion worth considering, whether the washbasin and bathtub should swap places.

We also have concrete look on the floor and white-beige on the wall. I can take a photo in the evening. We only have tiles in the bathtub area.
The shower should definitely be full height. I think tiling a bit under the window is okay. Tiling up to the bathtub is not really my thing, then you might as well tile the whole room (except the shower half-height).
