APs outdoors are not planned. The little house isn’t that big. Or do you mean that if I’m picking apples in the 800 sqm garden, I would miss the mailman ringing because the reception is bad?

Compared to a 10" cabinet you have a larger selection of devices or installations. Regarding depth, I would start at 450mm. 400mm would be too tight for me. It depends on what devices are supposed to go in. A removable side panel can also be helpful. If a NAS is to go in, 9 U will be quite full already.

For the patch panel, I would go straight for a 24 port one. It doesn’t need more space but offers expansion possibilities. Ever worked with an LSA patch panel? It can be quite stubborn once multiple cables are mounted. Personally, I am now tending towards keystone modules for patch panels. Each cable is mounted individually and clicked in at the desired position.
I have considered, since only the cameras need PoE, whether two switches could suffice and be cheaper. For example, a 5-port PoE switch and a 12-port non-PoE switch.
NAS:
I would also go for a Synology NAS. I have one from the J-series and, when buying a new one, would definitely go one class higher in the rack. But currently I’m out of the loop regarding what exactly is available.
What would be the alternatives to a NAS? What about an NVR? It also stores images, right? Do I also have access to the videos via phone including live image and alarms?
Or can I simply connect a hard drive to my Fritzbox and have the images stored there?
My wife is not interested at all in all this technology, so the budget here is limited and I lack the arguments. I want to invest in security first of all. I (initially) do not need a media server or another storage medium for private data.
Meanwhile, the walls are plastered, so laying further cables would only be possible with extra effort. My wife would kill me if I chisel more slots now and make a mess xD
Just put a 19" cabinet on the wall. You will absolutely regret the 10"-claustrophobia variant. If it hangs under the ceiling, depth is secondary; I would just look at how deep the devices to be installed are and add 20 cm. By the way, the mounting rails are not directly at the “front” but shifted 5-10 cm backwards, so you can still maneuver the cables. Then 60 cm depth suddenly becomes 50, from which the device depth + reserve is subtracted. You almost never go wrong in the network segment with a 60x60 cabinet.

Depends on how many cameras you want to connect. Generally, stay away from the J variants. No idea why that junk even exists. The Value series is good and if it may be a bit more, then the Plus series. I think for you, it will come down to the DS223 or DS124. Depending on what else you want to do with the thing, e.g. backup server, file server, central photo storage or something. If you want to know exactly whether it will work with your cameras (which, by the way, should support ONVIF), just search for “Synology NVR advisor.”
We have a Cat7 at the entrance for the doorbell and at two corners of the house (northwest corner and southeast corner) at the soffit a Cat7 cable each. Was that thought too sparingly? I have to honestly admit that this topic never came up during the house planning and I just tackled it on short notice. Of course, I accept that not everything is as easy or even possible anymore.
