Wifi 6 (AX) will deliver well over 1 Gbit/s. This will also require connecting the access points via multigigabit switches.
Of course, one could say that such bandwidth is not necessary in home environments. However, I know at least a handful of people for whom the connection between floors with 1 Gbit/s was not sufficient. Often the NAS (with 2 x 1 Gbit/s) was connected in the basement. All devices push their backups there, the TV streams from there, etc.
And yes, you can also do 40Gbe over copper on the short distance... but it is simply more expensive than 2 MM SFP+ and a bit of fiber optic cable.
